Mother Teresa once said, “You can do things I cannot, I can do things you cannot, together we can do great things.”
That quote is one of the best ways to describe my mom’s healthy vegetable soup. You would think that this vegetable soup would be all fancy schmancy, but the truth is, all my mom puts in this soup is hot water, pork bones, and vegetables. No seasoning whatsoever. My mom told me that all the flavors within the soup make up the taste. She actually puts in the pork bones first to get all the flavor out, but after that, it’s just up to the carrots, corn, celery, red beans, zucchini, and tomatoes. I love how vegetable soup is different than a normal dish, because there is no dominate ingredient.
So, try it out! My mom even throws a little chicken apple sausage in to spice it up. Maybe you can even put fruit into your vegetable soup because like I said, their is no fixed base/taste. If you make this soup, I promise you’ll love the taste and have fun making it too.
Nate, I make soup all the time, so I’m excited to try out your mom’s recipe next. I have some ham hocks in the freezer which I think will work for the pork bones. Thanks for the great suggestion!
