We all know it. When most people look at a swamp green-looking smoothie, their immediate reaction is: “Yep, not drinking that.” or “EW!” or “That probably tastes horrible.” And honestly, a lot of the times these nutrient packed smoothies don’t taste like anything close to enjoyable. Let me introduce you to one of the exceptions, my mom’s tasty thin mint smoothie.
At a pale shade of green-brown, you could assume that this healthy drink would be like all the rest. But here’s the thing. After I took one tiny whiff of the smoothie, I knew that this was actually going to be delicious. For a frozen treat, it actually wasn’t too sweet. It’s the perfect ice cooler for the hot California summer. Who knew that a drink featuring spinach, combined with mint leaves, yogurt, maple syrup, almond milk, and chocolate chips could taste so good? I guess it’s just deceptively tasty.
Recipe for Thin Mint Smoothie:
• 3/4 cup plain, nonfat greek yogurt
• 1/4 cup fresh mint (tightly packed)
• 1 cup almond milk
• 1/4 cup dark chocolate chips
• 1 cup baby spinach
• 1 tbsp. maple syrup, to sweeten
• 2 cups ice
Put everything into a blender and enjoy!
