Day 3: Baking Time!

So today I decided to change things up try some baking. I found this fast berry cobbler recipe and thought: “Why not?” For a quick recap, the dessert was relatively basic and turned out a lot better than I thought (kind of a theme this week). It took around an hour and fifteen minutes to make, so not that bad at all. I kind of “eyeballed” some of the ingredients, which I know is usually a bad idea, but it didn’t really change the outcome by much. The cobbler was really chewy and soft, which was perfect for me. It didn’t rise in the baking pan as much as I’d expected, which was probably due to a mishandling of the baking powder. As per usual, I think that this is a great recipe for all of you to try, especially if you’re new to baking, like I am. The most of the ingredients required can most likely be found at home and the only thing I had to go to the store for was the berries. And while there are some areas where you may make a mistake or two, the recipe is super straight forward and clear, so you will probably know exactly what to do at all times. The cobbler also makes for a great midday snack if you cut it into mini bite sized pieces!

To top things off, I’d say that Day 3 went pretty well. I mean, this was probably the first time that I had ever baked something from scratch all by myself. Everything in the berry cobbler was a hit, the batter, the texture, and the fruit compote. So go try making it! It’s not too time consuming and I’m sure you’ll love the results.
