Vegetables aren’t always the favorite during a meal, especially for younger ones…
Let’s face it, a meal, though healthy, wouldn’t feel quite complete if it was made up of all vegetables. Usually we expect some sort of protein, carbohydrate, or even dairy to go along with those greens. When you hear that vegetable soup is for dinner, it may not be the most exciting thing in the world. That is, unless the vegetable soup is my mom’s.
As well as being a very healthy meal, veggie soup is one of our homemade favorites. With a variety of ingredients including carrots, onions, corn, green beans, broccoli, zucchini, and kidney beans, it isn’t at all “bland/boring”. The red tinted broth’s flavor is simply a combination of pork bones and water. What’s unique is that the vegetables sort of contribute some of their taste to the base, making the dish that much more yummy. To make it even better, my mom fries some chicken apple sausages (any sausages would probably work) and cooks some shell pasta for a fancy upgrade. When you put it all together, it’s hard to imagine that what you’re eating is even a vegetable soup. In addition, we usually make more than a couple days worth of soup because it makes for a nice leftover meal. I mean, a couple scoops, a minute in the microwave and you’re all set. You heard me right! It’s vegetable soup, but likable.
